Purple Haze Carrot is a hybrid, imperator type carrot that offers beautiful colors and great flavor. Imperator-types are long and slender with a taper down to a sharp tip. Purple Haze produces 7-9" tapered carrots that have a purple exterior and orange interior. This variety was an All-America Selections winner in 2006 for taste and appearance. Purple Haze Carrot has excellent flavor and the purple color means it's high in antioxidants. It's a great carrot for raw eating on salads and other dishes, but also retains flavor well when cooked. It will also freeze well when blanched and placed in an ice bath. It will lose some of the purple color when cooked.
